




The "Cantina Le Ginestre" is a family-run winery located in the municipality of Grinzane Cavour, in the hills of the Langhe, a UNESCO World Heritage Site in Piedmont.
The small village of Le Ginestre was already marked on cadastral maps since 1700 and has always been inhabited by winemakers, who have handed down their passion for working in the vineyards with the skills that are still theirs today. Some of them, who worked in the property of Camillo Benso, Count of Cavour, creator of the Unification of Italy, were the ancestors of the Audasso family.
Currently in the Masks Room of the Castle of Grinzane Cavour, not far from the cellar, it is possible to see the cadastral map of 1783 where the "Regione delle Ginestre", as it was called then, is clearly visible.
Today the brothers Gian Luca and Barbara Audasso are proud to continue the family tradition.
In the cellar the wines are processed as little as possible preserving the varietal characteristics as much as possible. The submerged cap vinification, already used in the past, provides the best extraction of the colouring and aromatic substances contained in the skins, favouring tasty and long-lived baroli.
